Aji Golden Chilli Pepper seeds
Aji Golden or Golden Pepper is one of the unique varieties of the Capsicum bacattum species and the genus Capsicum which encapsulates five domesticated pepper species. The origins of Aji Golden can be traced back to Ecuador, Peru and Chile where it has been used for decades. The plant is now grown in many areas of Central and South America where it provides a key ingredient in indigenous South American cuisines. Aji Golden pods are shaped like pedants and reach between 6 and 8 cm in length. Pods transition from light green to golden yellow and signal they are ripe.
The taste of the pods when they are slightly unripe varies from when they are fully ripe. Slightly unripe pods have a citrusy flavour, that’s clean, mild and slightly floral. Fully ripe pods, on the other hand, are fruity and sweet without the floral aspect. Aji Golden is a useful ingredient when used in salsas, as stuffing or when the pods are pickled. It takes between 75 to 90 days before the Aji Golden plant matures after which it can produce between 50 and 100 pods. The temperature ideal for germination ranges from 20 to 28 degrees Celsius. It would, therefore, be prudent to grow them in a greenhouse.
