Cucurbita pepo belongs to the family Cucurbitaceae, genus Cucurbita. It is also known as yellow squash. Its synonyms are C. maxima, C. mixta, C. moschata, and C. pepo. The plant has been cultivated in Mexico and South America for a very long time. It is believed to have been cultivated since 5500 BC. It grows well in a place with full sun and in fertile well-drained soil. The soil should be moist. The plant grows well in zone 3 to 9 with a pH of 6.1 to 7.0. For optimal growth, the temperature of the soil should be 70 degrees Fahrenheit is needed. 

The plant is monoecious and is pollinated by insects. They produce a lot of nectar thus attracting insects. The plant matures in 50 to 60 days from germination time. It is very productive and popular. Germination takes place within 6 to 10 days. The seeds are sown in depth not more than 1 inch deep. Some of the squash may be harvested a few days after the plant bloom. When the plant starts to bloom, one should check the garden at least after every two days because production continues throughout the season. Squash are harvested when they have a length of 4” to 7” so that the production remains high. The fruit is dark green and the inside flesh is white. It has black seeds which are harvested when the plant is mature. When the fruit is still young, the seeds are white.

The plant is used as a salad as well as in cooking other different kinds of dishes. It can also be eaten raw and added to a salad. Other parts of the plant such as young shoots, flowers and leaves can be eaten but usually tastier when cooked. It can be roasted in ashes and eaten as food.
