Douglah Billyboy is one of the varieties of peppers that belong to the Capsicum chinense species. This spicy pepper is also a variant of the Trinidad Douglah which is one of the hottest peppers in the world. Despite having its origins in Australia, the use of Douglah Billyboy has increased over time to neighbouring countries like New Zealand. The qualities of Douglah Billyboy that make it stand out at first glance include the yellow colour and the shrivelled surface of the pods. Unripe pods are initially green in colour. The ripening process turns them yellow before they finally adopt an orange hue which signals they are fully ripe. Douglah Billyboy is very hot (1,200,000 Scoville heat units), and one must have a good sense of proportion when using it. Once consumed the pepper is found to have a fruity flavour that’s aromatic and spicy. Douglah Billyboy is a useful condiment in the making of salsas and hot sauces as well as in the preparation of various types of meats. The plant that delivers the fruit takes 120 days to mature during which optimal soil and weather conditions will have to be created to maximise yields. One is advised to use gloves when handling this pepper given how hot it is. This hot pepper should also be kept out of the reach of children.
