Bolivian Rainbow, a member of the Capsicum annum species of peppers, is a beautiful plant that has its origins in Bolivia where it remains popular to date. Given its beauty and verve as a condiment, this pepper has gone on to be a regular fixture in Central and South American cuisine where it’s also widely cultivated. What makes the Bolivian Rainbow distinctive and unique is its bushy nature coupled with the multi-coloured fruits that are produced all year round. The one-inch long pods start off yellow when unripe before turning red once the ripening process concludes. While known more for its ornamental attributes, Bolivian Rainbow is quite hot too registering between 30,000 and 50,000 Scoville heat units.
The considerable heat makes this pepper a viable candidate for inclusion in the making of salsas, hot sauces and salads. The flavour can be described as grassy, crisp with a hint of tang. Bolivian Rainbow flourishes in warm climates where its purple flowers can bloom and mature all year long. Once planted, this pepper will take between 60 and 90 days before harvesting can be done. Weather conditions will have to be perfect in order to have a good yield and will include, warmth, constant sunshine and fertile soils. Once all these conditions have been fulfilled, one could expect the yield per plant to surpass the 100 fruits mark.
